I love feeling like I’m having dessert for breakfast, while feeding my body tons of nutrition. Don’t you? Well, this Vegan Chunky Monkey Smoothie Bowl might look like it’s loaded with sugar and junk, but it’s super healthy for you. Pinky swear.
A smoothie bowl is more versatile than your traditional smoothie. You can add a lot more ingredients and it’s more filling. It’s thick enough to eat with a spoon. I’ll never give up regular smoothies because they’re great for on-the-go meals. However, these breakfast bowls are perfect when you have time to sit down and eat. The great thing about smoothie bowls is that they are so versatile. So, feel free to add your favorite plant-based milk, nut butter, fruit, nuts, seeds, grains and almost anything you desire. Have fun with it!
The super stars of this bowl are the bananas, peanut butter and chocolate. Who wouldn’t want to have those flavors combined for breakfast? They really compliment each other nicely and take things to another level. This baby is thick, smooth, creamy and purely decadent! It’s dairy free, gluten-free and it’s free of refined sugars. The natural sweetness comes from the bananas and dates only. So, dig on in and feel good about your breakfast choice.
Oh yeah, I did add vegan chocolate squares to this bowl, but I don’t typically do this for breakfast. It was mostly just for the pictures… I swear. 😉 It’s definitely a healthier chocolate, but I think it’s a bit much for breakfast. Did I just write that? However, I do add my favorite chocolate sauce, that’s made with very pure ingredients. It’s not needed, but it sure adds more chocolatey flavor and that’s always a good thing.
This delightful breakfast will give you a bowlful of nutrition. The raw cacao is a great source of iron, magnesium, zinc, omega-6 and it’s loaded with antioxidants. I get a natural buzz and it really jump starts my day. So, you’ll have tons of energy and fulfill your chocolate craving at the same time. Pretty good deal, huh?
The chia seeds will really boost up the superfood power, too. These magical seeds have twice the amount of protein than most grains and five times more calcium than milk. They are loaded with antioxidants, friendly fiber, potassium, omega-3 and omega-6 fatty acids, too. That’s some major brain food!
I also added some rolled oats, which are rich in fiber, magnesium, zinc, selenium and phosphorus. The peanut butter will provide some extra protein, vitamins and minerals, too. The banana will give you a healthy dose of vitamin B6, manganese, vitamin C, potassium & dietary fiber. Last, but not least are those deliciously sweet dates. They provide natural energy to the body and they’re a great source or fiber, calcium, iron, phosphorus, potassium, magnesium, thiamin, riboflavin, niacin, folate, vitamin A, vitamin K and zinc. Wow, talk about a powerful punch of nutrition. Do you need any more reasons to make this yummy bowl? Let’s do this!
This recipe serves 2 people, so if you are dining alone, just cut the recipe in half. 🙂
In a blender, combine all ingredients until smooth & creamy. The consistency should be thick, (a bit thicker than a regular smoothie) Add more fruit or a few ice cubes, if it’s too thin. If it’s too thick, just add a touch more milk. Add your toppings and enjoy!
