This vegan Piña Colada Smoothie is creamy, sweet, refreshing and nutritious. It’s non-dairy, gluten-free, guilt-free & vegan.
Summer is almost over for most people, but it’s still hot in my neck of the woods. I still crave cold and refreshing drinks, so I wanted to create a tropical cocktail to cool down and relax. The first think that came to mind, was the classic, Piña Colada. I wanted to enjoy the same flavors, but in a much healthier way, so I created this Piña Colada Smoothie.
My love for the Piña Colada, came at a very early age. Don’t worry, there was no alcohol involved. My mom used to order a Piña Colada, when we went out to dinner. One day, I asked if I could have my own, so they served me up the virgin kind. What a delight! It was like having dessert before dinner and my parents didn’t know. I fooled them! I always ate my meal, because I knew they would catch on, otherwise. They are quite filling.
Now that I’m older, I don’t crave that fake sweet stuff, but still crave the tropical, creamy goodness. This Piña Colada Smoothie will fulfill your craving and fill you up with vitamins and nutrients. Especially, potassium and vitamin c. You’ll get a natural buzz from this gem. Feel free to add some rum, if you’re having “that” kind of day. We all need it sometimes. Enjoy!
- 2 cups pineapple , cut into 1" chunks
- 1 cup coconut water
- 1 cup coconut milk (or any plant based milk)
- 1 frozen banana
- 6-8 ice cubes
Blend all ingredients together, until smooth and creamy. Pour into your favorite glass and serve immediately. Enjoy!
*Frozen pineapple can be used, just omit the ice cubes.
