    Coconut Lime Popsicles

    These Coconut Lime Popsicles are creamy, coconutty and full of zesty flavor! They are so easy to make and require 5 simple ingredients!

    The weather is really heating up over here, but we're keeping it cool with lots of refreshing Salads, Drinks, and Frozen Treats. Things are also super busy since my kiddo is home from school, so I like to keep it simple with minimal effort and ingredients.

    These popsicles are a breeze to make and call for common kitchen staples. The hardest part is waiting for them to finish freezing which could take 4-6 hours. This all depends on your freezer and mold. It's worth the wait though!

    HERE'S WHAT YOU'LL NEED TO MAKE COCONUT LIME POPSICLES:

    (FULL INGREDIENT AMOUNTS IN RECIPE CARD BELOW)

    1 - Full-Fat Coconut Milk (canned)
    2 - Fresh Lime Juice
    3 - Lime Zest
    4 - Maple Syrup
    5 - Salt

    That's it! The lime flavor and sweetness can easily be adjusted - just add more or less according to your taste. The zest can be omitted if you prefer, but you might want to add a little more lime juice.

    You can also amp things up with a teaspoon of vanilla extract or a few tablespoons of coconut flakes. Or, if you're feeling daring, you can add a pinch of cayenne pepper for a kick.

    HOW TO MAKE COCONUT LIME POPSICLES

    • STEP 1 - Place all the ingredients in a blender and blend for 10 seconds until smooth (don't blend too long). If you want larger flecks of zest in the popsicles, add it after blending the mixture and pulse 1-2 times. You can also whisk the mixture instead of blending. Try to use something with a pour spout to easily transfer to molds.
    • STEP 2 - Pour the mixture into the mold, leaving about ¼" of room on top. Place the popsicle stick in the mixture and place in freezer for 4-6 hours.

    NOTE:

    Most of the zest tends to sink to the bottom of the popsicles, but it's actually really delicious! The first bite is creamy, sweet and zesty! If you don't think you'll like that, you can omit the zest and add a little more lime juice to the mixture. You can also add the zest after freezing. I added more zest to the frozen pops in these photos.

    WHAT ARE THE BEST POPSICLE MOLDS TO USE?

    Well, I think most popsicle molds will do the job nicely, but I really like these Stainless Steel Popsicle Molds by Onyx. The set contains 6 molds, a stainless-steel tray, and reusable bamboo popsicle sticks. The molds are well made and very sturdy. Plus, I love the size and shape of the finished popsicle. They release really fast under running water and they are easy to clean. I'm sure they 'll last forever!

    They are pricier because of the stainless steel, so if that's not in your budget, I also like these BPA-Free Popsicle Molds. This set comes with 6 molds, stand-up tray, silicone funnel, and a cleaning brush.

    I like both of these designs because the molds are not attached to the tray. This way you can grab one treat without having to take out the whole tray. So easy!

    CAN POPSICLES GET FREEZER BURN?

    Yes, they definitely can get freezer burn on the surface. Popsicles can last for months in the freezer, but I think they taste the best when they are under 2 weeks old. Honestly, it's not a problem over here because they never last that long. They are too delicious to sit in the freezer!

    Vegan Coconut Lime Popsicles

    Ingredients

    • 14 ounces full-fat coconut milk , canned
    • 1 teaspoon lime zest (about 1 lime)
    • 3 tablespoons lime juice , freshly squeezed
    • ⅓ cup maple syrup (sub agave nectar)
    • ¼ teaspoon salt (*optional)

    Recommended Equipment

    • Popsicle Mold

    Instructions

    • Place all the ingredients in a blender and blend for 10 seconds until smooth (don't blend too long).         Thank you! I use Thai Kitchen or Sprouts brand. Have you tried So Delicious coconut milk in the tetra pack? It's not always easy to find, but it may be what you're looking for 🙂
