    If your mornings are busy, but you want a hearty breakfast, this Apple Cinnamon Oatmeal is a great choice for you! It's made quite similar to my pumpkin spice oatmeal and it's just as easy. The combination of creamy oats and sweet, caramelized apples will make your mornings complete!

    • Vegan Butter - If you want to make this oil-free, just omit the butter and cook the apples in 3 tablespoons of water, adding more if needed.
    • Rolled Oats - Use certified gluten-free if you have a gluten intolerance.
    • Non-Dairy Milk - Any sweetened or unsweetened variety will work such as soy, rice, oat, cashew, almond, or coconut.
    • Cinnamon - Adds a hint of warmth to your morning. You can also use a pinch of nutmeg or ground ginger for extra goodness.
    • Brown Sugar - You can also use maple syrup or agave nectar.
    • Vanilla Extract - This is optional but oh so good!

    How to make Apple Cinnamon Oatmeal

    In just 10 minutes, you can put this recipe together. Here's what you'll need to do:

    1. In a small saucepan, melt the butter over medium heat. Add the apples, water, cinnamon, and brown sugar then cover with a lid.
    2. Cook for 6-8 minutes until apples are fork-tender, but hold their shape and the sugar is slightly caramelized. Stir occasionally to prevent burning and add a splash of water if needed.
    3. To a medium pot over medium-high heat, add the non-dairy milk, oats, cinnamon, and salt. Stir to combine and bring to a boil.
    4. Now reduce heat and gently simmer for 5-8 minutes or until thickened. Stir occasionally to prevent burning or sticking. Remove from heat and stir in the maple syrup and vanilla extract.

    Storing Recommendations

    Store the oats separately from the apples in an airtight container in the refrigerator for 3-4 days. When ready, combine the apples and oatmeal then gently reheat on the stove or in the microwave, adding a splash of milk to restore the creaminess.

    Ingredients

    Stewed Apples

    • 1 large sweet apple (about 1 ¼ cups), peeled and diced into ½” pieces.
    • 1 tablespoon vegan butter
    • 2 tablespoons light brown sugar , or preferred sweetener
    • ½ teaspoon cinnamon
    • 3 tablespoons water , more as needed

    Oatmeal

    • 2 cups non-dairy milk
    • 1 cup old-fashioned rolled oats
    • ½ teaspoon ground cinnamon
    • 1 tablespoon light brown sugar , or preferred sweetener
    • ½ teaspoon pure vanilla extract
    • ¼ teaspoon sea salt or to taste

    Serving Ideas

    • Chopped pecans, a swirl of non-dairy milk, a pat of vegan butter, or cinnamon.
