Ingredients

Stewed Apples

  • 1 large sweet apple (about 1 ¼ cups), peeled and diced into ½” pieces.
  • 1 tablespoon vegan butter
  • 2 tablespoons light brown sugar , or preferred sweetener
  • ½ teaspoon cinnamon
  • 3 tablespoons water , more as needed

Oatmeal

  • 2 cups non-dairy milk
  • 1 cup old-fashioned rolled oats
  • ½ teaspoon ground cinnamon
  • 1 tablespoon light brown sugar , or preferred sweetener
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon sea salt or to taste

Serving Ideas

  • Chopped pecans, a swirl of non-dairy milk, a pat of vegan butter, or cinnamon.

Instructions

Stewed Apples

  • In a small saucepan, melt the butter over medium heat. Add the apples, water, cinnamon, and brown sugar then cover with a lid. Cook for 6-8 minutes until apples are fork-tender, but hold their shape and the sugar is slightly caramelized. Stir occasionally to prevent burning and add a splash of water if needed.

Oatmeal

  • While the apples are cooking, you can begin the oatmeal. To a medium pot over medium-high heat, add the non-dairy milk, oats, cinnamon, and salt. Stir to combine and bring to a boil. Now reduce heat and gently simmer for 5-8 minutes or until thickened. Stir occasionally to prevent burning or sticking.
  • Remove from heat and stir in the maple syrup and vanilla extract. Add the oatmeal to bowls and top with stewed apples.
  • Serve with chopped pecans and a swirl of milk if desired.
