Stewed Apples
In a small saucepan, melt the butter over medium heat. Add the apples, water, cinnamon, and brown sugar then cover with a lid. Cook for 6-8 minutes until apples are fork-tender, but hold their shape and the sugar is slightly caramelized. Stir occasionally to prevent burning and add a splash of water if needed.
Oatmeal
While the apples are cooking, you can begin the oatmeal. To a medium pot over medium-high heat, add the non-dairy milk, oats, cinnamon, and salt. Stir to combine and bring to a boil. Now reduce heat and gently simmer for 5-8 minutes or until thickened. Stir occasionally to prevent burning or sticking.
Remove from heat and stir in the maple syrup and vanilla extract. Add the oatmeal to bowls and top with stewed apples.
Serve with chopped pecans and a swirl of milk if desired.
