Hi Aubrey, your feedback just made my day! I'm so happy they are a holiday hit. I like your idea of doubling the filling...I'm going to try that this year. Have a Merry Christmas. :)

I make these for every party we go to and every year for appetizers at Thanksgiving and Christmas Day. They are a hit with everyone no matter their taste or diet preferences. I double the filling recipe as I like to completely fill the phyllo cups to the top. I usually make the filling ah ad of time too so it's fast and easy to stuff and bake. No need to thaw the phyllo cups! Just LOVE this recipe!

Hi Jamie, you can leave them covered in the fridge for a few days. They also freeze really well for 2-3 months and you don't have to thaw them before baking. Just pop them in the oven from frozen, adding a few more minutes to the cooking time. :)

Hi Manisha, I haven't tried it this way yet, but I would bake the cups first, then let them cool. Then I would add the filling to the cups and warm in the oven. Maybe reduce the heat slightly so you don't burn the pastry. I hope this helps. I'd love to hear how they turn out if you try it. :)

These Vegan Spinach Artichoke Cups were wonderful! I made them for a church gathering in honor of a family who is vegan and they rapidly disappeared! (The snack, not the family!) Lots of positive feedback too. It was my first attempt at a vegan recipe and I will make them again! Thank you Melissa, you have made it easier to make everyone happy!
