Here are some options to try if you are getting uneven browning:
- Try lowering your oven temp to 425 F and adding a few minutes to the baking time.
- Bake just one batch at a time on the middle rack, rotating halfway through (keep the other batch covered on counter).
- I prefer a light colored baking sheet since dark sheets absorb/radiate more bottom heat, leading to over-browning underneath. Switch to a light-colored metal sheet or add a silicone mat for extra insulation.
- Try to let excess water from alkaline bath drip off before adding to the baking pan. If you notice pooling on the pan, or on top of pretzel, gently pat with a paper towel.
