In reply to Bron. Hi Bron, Thank you so much for the 5-star review! I'm so happy you loved the soup. :) I'm sorry the meatballs fell apart. Homemade vegan meatballs can become quite soft in the broth, especially as they sit. Adding them a few minutes before serving should help them hold their texture better. I plan on working on another recipe that will hold up in these situations. Thanks so much for giving the recipe a try and for sharing your feedback!

This soup was so delicious I had to give it 5stars. But I did have a problem-my ‘meatballs’ fell apart. This soup, I’m pretty sure, would have been even better if the ‘meatballs’ had stayed whole. I may have left them in the soup too long as I didn’t time how long they were in there. I have some soup and ‘meatballs’ left for tomorrow. I took your advice and only added enough for tonight, so I’m going to just put them in and then serve the soup quickly. Hopefully it will work. Congratulations on creating an amazing flavour.

This is our absolute favorite Italian Wedding Soup🍲😋🤤. I have been Vegan 🌱 for a very long time and I couldn't master the right recipe, and since my family is from Naples, Italy I really missed this soup.

In reply to StephG. I'm so glad you loved the recipe. I think the carrots are tender enough at that point, but everyone has different taste. But, I'm sure cooking slower and longer will elevate the flavor even more. Thank you for sharing feedback. :)
