I'm so happy you loved the Pad Thai! Thanks for trying it. :)

I haven't tried the recipe with anything else yet, but I think red quinoa will work well and hold up nicely. While the texture won’t be exactly the same, it has more “bite” than white quinoa and works well as a 1:1 substitute for cooked bulgur. I'd love to hear if you try it.

Hello! I loved your Pad Thai and was considering trying this next, but I have Celiac disease, so no gluten for me. Should I just substitute rice and quinoa for the bulgar?

In reply to <a href="https://veganhuggs.com/vegan-enchilada-casserole/comment-page-1/#comment-56759">Beth Agosta</a>.

Hi Beth, I use Bob's Red Mill which is a medium #2 grind (seems slightly coarser to me). However, you can use a fine (#1) or coarse (#3) ground, too. The bulgur cooking method and time may change slightly, along with a slight texture variation, but they all work in the casserole. I hope this helps. I'm happy you'll try the recipe. It's a family favorite. :)
