Love this recipe !
I have cooked 3 times and the guests are always delighted.
Even without guascas is great. For me parsil works well. The sour cream is so delicious too!
I will explore and add white beans or chickpeas next time.

Hi Joanne, I usually just eat it right out of the soup with my fingers. It's not overly messy. Cutting the kernels is a great option too! :)

Delicious and so pretty. This is new to me so I have a question. When served, is it proper to pick up the corn pieces with your fingers to eat or should one try to cut if off with a knife in the bowl?

I love this recipe, easy and the Ajiaco turns out great every time. Have made it so many times already and received many compliments both from Colombians and others who are new to this dish. I recently made it for my husband's family, who are Colombian, and they even said it was the best aijiaco they have tasted!
