Hi Lindsey, I haven't tried it, but I'd imagine it would work. However, I wouldn't cook the noodles in it because they only take 2-3 minutes and they are very fragile.

This is by far my favorite recipe I have ever encountered!!! The flavors, the vegetables, the aroma, everything was absolutely perfect. I followed the recipe to a T and doubled it (big family). The only thing I did not do was add the tofu, which felt unnecessary because the noodles already made the soup so filling. The shiitake mushrooms tasted so tender and meaty at the same time and were the perfect pair with the bell peppers. I’ve made this soup 2 times already in the last 2 weeks and my family is obsessed with it! My mom had some sourdough bread with it which was a nice tough. No other substitutions needed. Thank you so much for this recipe, Melissa!!!!!!!
