Strawberries and Cream Smoothie

This Strawberries and Cream Smoothie tastes like a classic 50’s diner milk shake, but it’s missing all the unnecessary sugar and dairy. It will take you back in time, while keeping you healthy and looking young.

Strawberries and Cream Smoothie

This Strawberries and Cream Smoothie looks like it might be unhealthy, but it’s a trick. It will give you a nice dose of vitamin c, potassium, selenium, magnesium, protein and omegas. That’s a lot of plant power and the perfect skin-food. You’ll be glowing in no time!

You can enjoy this dreamy smoothie for a nutritious breakfast, snack, post workout or even a healthy dessert. Your tummy will be satisfied and your body will be nourished. It will keep you going throughout the day and curb that afternoon sugar craving.

To make this Strawberries and Cream Smoothie thick and creamy, I used soaked cashews, coconut milk, dates and handful of strawberries. SO many nutrients in this heavenly treat.

I topped this strawberry creation with fresh coconut whip, which takes it to another level. I always have fresh coco whip in the fridge, because I use it a lot. It’s so easy to make, inexpensive and tastes incredible. If you’d like to try it out, you can find my recipe here.

So, are you ready to give this a go? Let’s do this…

  • 1 cup coconut milk (or any plant-based milk)
  • 1/4 cup raw cashews , soaked in water for 2-4 hours
  • 8-10 frozen strawberries
  • 1/2 teaspoon pure vanilla extract
  • 1 teaspoon chia seeds
  • 3-4 medjool dates , pitted. (sub 2 teaspoons maple syrup)
Instructions
  1. Place all ingredients in a blender. Blend together until creamy and smooth. If it's too thick, add a bit more milk.
  2. Top with some fresh coconut whip, if desired. (store-bought is great too)
Recipe Notes

*If you don't have the cashews soaked, you can still use them. Soaking them makes a creamier smoothie.

*Prep time doesn't included the soaking time for the cashews.
