Oh goodness, the holidays are upon us, and I still need to start my Christmas shopping! I’ve been really busy with the blog, and I just keep putting it off. This is so unlike me…I’m usually done with my Christmas shopping by October. I think I’ll brave the crowds, and go tomorrow. Wish me luck!
During busy moments like this, I don’t have a lot of time to prepare meals. I need a quick, delicious snack to keep me going. This parfait is perfect for those moments. It’s light & refreshing, yet filling. It’s so easy to prepare, and of course it’s healthy & nutritious. I love the balance of the creamy and crunchy texture. Parfait also makes a rock star breakfast, too. My kiddo is all smiles in the A.M. when I make him this. You can make the cashew yogurt the night before, and then add your favorite ingredients in the morning. Also, parfait doubles as an elegant dessert! It’s nice to get fancy once in a while. Especially, when it’s this easy.
There are many delicious ways to make vegan yogurt, with different ingredients, and I will be sharing them in future blog posts. For this yogurt recipe, the magic ingredient is the cashews. They create the perfect creamy texture. For the parfait, I layered the yogurt, with raw granola and pomegranate seeds and topped with blackberries. Parfait is so versatile, so you can use just about anything to layer it with. Your parfait can change with the seasons, and your mood. Feel free to get creative!
This yogurt recipe isn’t like store-bought yogurt, because it’s not fermented. However, it definitely has the sweet tangy flavor & creaminess of traditional yogurt. You can always stir in some probiotic powder, to give your belly friendly bacteria.

- 1 cup raw cashews , soaked in filtered water 2-4 hours
- 1/4 cup coconut milk , cold (or any plant-based milk)
- 2 tsp maple syrup or agave
- 1/8 tsp sea salt
- 1 Tbsp shredded coconut
- 1/2 tsp vanilla extract
- 2 1/2 tsp fresh lemon juice
- 1/4 tsp probiotic powder , optional (or open one probiotic capsule)
- 1/4- 1/2 cup granola
- 1/4-1/2 cup pomegranate seeds
- Pomegranate seeds
Drain and rinse cashews. Discard water. Place first 7 ingredients into a blender. Blend until smooth. It should be thick like yogurt. If it's too thick, you can add a bit more milk.
Layer each ingredient into your favorite glass. You can enjoy immediately, or let it sit in the fridge for a bit.
