Chocolate-Coconut Peanut Butter Bites

These Chocolate Coconut Peanut Butter Bites are easy to make and so nutritious. No sugar at all…the sweetness comes from the dates. They give you a great burst of energy, too. So when you’re feeling that mid-day slump, skip the coffee and sugar and eat a few of these tasty bites.

I made these Chocolate-Coconut Peanut Butter Bites for my son today. He was all smiles while enjoying these little pieces of heaven. I was all smiles, because he was getting a ton of nourishment. The best thing is that they’re so easy to make and so nutritious. It’s a great snack for school lunches, too.

Ingredients
  • 1 cup pitted dates
  • 1/2 cup rolled oats
  • 2 tablespoons natural peanut butter (or your favorite nut butter)
  • 3 tablespoons raw cacao powder (or cocoa powder)
  • 2 tablespoons coconut flakes (+ more for rolling)
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp seeds
  • 1 tablespoon coconut oil
  • Pinch of sea salt
Instructions
  1. Place all ingredients into a food processor and blend until it's a sticky consistency.
  2. Scoop a heaping tablespoon of the mix into your hand and roll into a ball
  3. Roll bites in coconut flakes
  4. Refrigerate for 30 minutes for firmer bites.
  5. Store in fridge for 5-7 days or freezer 2-3 months.
