The other day, I couldn’t think of anything I wanted to have for lunch. Such a dilemma! Well, I knew I had to have something, so I whipped up this delicious berry smoothie bowl. It did not disappoint!
A smoothie bowl can be a perfectly balanced meal. They’re quick & easy to make, filling and nutritious. I packed this bowl with antioxidant rich berries, cashews, oats, bananas and flax seed. I felt supercharged after this bowl!
1/2 cup coconut milk (or any plant-based milk)
1/4 cup rolled oats
1/2 cup frozen blueberries
1 /2 cup frozen strawberries
1/2 cup frozen raspberries
1 frozen banana
1 tablespoon flax seeds
8-10 raw cashews
1 date for extra sweetness (optional)
1/4 cup granola
1 tbsp coconut flakes
In a blender, combine all ingredients until smooth. The consistency should be thick, (a bit thicker than a regular smoothie) so add more fruit if it’s too thin. Add more milk, if it’s too thick. If you need more sweetness, you can add a pitted date or 1 tsp of maple syrup. Pour into bowl, and add your favorite toppings. Enjoy!
